We will, hopefully within the next twelve months, have some major work done to our kitchen. I currently have a pair of small wall mounted Mission speakers on the wall at one end, but with the new layout I think the only option I will have will be to have in ceiling speakers.

Does anyone here have experience with these? All advice will be apreciated. Obviously, I am looking for fairly good sound quality, but don't know whether this is really possibly. I might be looking to power them with an AirPlay amp.

Which manufacturers should I consider?

I have used a pair of Polk speakers in the past and was very happy with then, however that said they were still not as good as a box speaker.

Right now I am using Wharfedale Diamond 9.1s for general listening paired up with a squeezebox and and old HT amp and it works really well.

I know that both Tannoy and Kef have a range of in-ceiling speakers. I should think these would perform as well as any, but I've never heard any (to my knowledge) ....

There are also some Monitor Audio ceiling speakers. I was considering a pair for my front high speakers for AV use but it's not happened yet.

Not in ceiling, but I have some Audica Pro Microlines as my AV rears, wired in with flat cable that once papered over and painted disappears. The Microline range is designed for commercial use, and while not cheap, are dead easy to fix as you wire the bracket, then one bolt secures the speaker.
