As to why remasters are often done from digital copies, could it be due to the difficulty in getting access to the original tape masters, which for things like the beatles are properly guarded quite carefully?

There was a lot of coverage in the press about the care over the Beatles master tapes and the exact alignment of the tape players, as well as the digital work done afterwards. I think this is inevitable given the restoration work that can be done with modern software. It is when the "mastering" is obtrusive e.g. heavy compression, HF and LF enhancement, stereo width processing that I think we notice and wish there was an "original" version.

Yes it lets you sample a gap on the record to sample the surface noise on that disk. It uses the sample to process the sound using your settings.

I read somewhere that the main reason for not making fully analog remasters of the Beatles catalogue were how hard it would be to get the proper consent from all parties to get access to the master tapes. It was apparently hard enough just to make the new CD remasters.
I guess it's too big an effort for all involved to sign a few papers, make some more money and at the same time bringing joy to thousands if not millions of devoted fans.

I've just come across this interview between Michael Fremer and Sean Magee about the remastering of the Beatles box set.

Some really interesting comments, especially about why a 44.1/24 transfer was used . . .

I just received my new 180g "Past Masters". It lacks "punch". I think it is a merely
transcription from the 2009 remastered cd series Ouch

Thanks for the information Wandique.
Myself I guess I'll just wait for the pure analog remasters. They're bound to be made somewhere down the line.
Then again Ermm, maybe I should get Abbey Road just to see how it fares
